The idea of this new restaurant is obtained through, decomposition of the process that each food undergoes until it reaches the table. The final dish is the result of the interplay between the chef and raw materials. All the components are transposed into an architectural shape. The transformation from concept to a project is made, focusing on social aspects of the brief. Due to consumer safety and clarity of process, recently restaurants have been increasingly looking for transparency during the cooking process. Architecturally, this has turned into open space kitchen areas with large glass walls that show the cooking process.
The project FOOD LOCKER wants to take a step forward and to reveal a fundamental component of the hidden process: THE RAW MATERIALS . The main goal is to clear the cooking process of the dishes so as to develop an interactive restaurant where customers can see the food before it is processed and know about their origins and their characteristics. The building facade becomes a full-height wall which conserves and organizes the raw materials, allowing people to see them both from inside and outside. The building wants to be a transparent shell that contains the production process of one of the world pleasures... the good cooking! |
La nuova idea di ristorazione parte dalla scomposizione del suo processo. Il piatto finale è il risultato dell’interazione tra chef e materie prime, componenti ai quali viene trasposta una forma architettonica. Il lavoro di trasformazione da concetto a oggetto tiene conto di aspetti sociali propri di questa tipologia d’uso: negli ultimi anni i ristoranti hanno sempre più cercato trasparenza del processo culinario, per una maggior sicurezza da parte del cliente e una miglior chiarezza nelle lavorazioni. La conseguenza architettonica è stata l’utilizzo di cucine open space, le cui grandi superfici vetrate permettono di assistere alla preparazione dei cibi.
Il progetto FOOD LOCKER vuole fare un passo in avanti e svelare una componente fondamentale del processo nascosto fino ad ora: LE MATERIE PRIME. L’obiettivo principale è rendere trasparente il processo di lavorazione delle pietanze in modo da sviluppare un ristorante interattivo nel quale i clienti possano vedere i cibi prima che siano cucinati e trasformati, conoscendone origini e caratteristiche. La facciata dell’edificio diventa parete attrezzata a tutta altezza, in grado di conservare e organizzare le materie prime, la cui visione è possibile sia all’interno che all’esterno. L’edificio vuole essere proprio un involucro trasparente che racchiude in se il processo di lavorazione di una delle gioie del mondo… la buona cucina! |
